Ingredients
1 cup Carolina® White Rice
1 cup dried black beans, rinsed
5 cups water
1/4 cup tomato paste
2 canned chipotles in adobo, minced
2 tbs canned adobo sauce
2 tbs sazon seasoning
2 cups Monterey Jack cheese, shredded
1/2 cup fresh cilantro, finely chopped
24 small corn tortillas (4.5-inch tortillas)
2 tbs olive oil
1 cup sour cream
1 cup guacamole
1 cup pico de gallo
Directions

1. Quick soak beans in Instant Pot and drain once done. Add beans and 3 cups water to Instant Pot. Cover with lid and lock. Select Pressure Cook setting on High pressure for 10 minutes or cook according to manufacturer’s instructions until beans are tender.

 

2. When pressure cooking is complete, Quick Release the pressure. Once pressure is released, remove lid. Drain and set aside.

 

3. Add rice and 2 cups water to Instant Pot; cover with lid and lock. Select Pressure Cook setting on High pressure for 3 minutes or cook according to manufacturer’s instructions until rice is tender.

 

4. When pressure cooking is complete, Quick Release the pressure. Once pressure is released, remove lid.

 

5. Transfer white rice and beans to large bowl. Stir in tomato paste, chipotles, adobo sauce and sazon seasoning. Let cool completely. Stir in cheese and cilantro.

 

6. Warm tortillas according to package directions. Add 1/4 cup filling down along center of each tortilla; roll up tightly. Brush lightly with oil. Place seam side down on parchment paper-lined tray.

 

7. Preheat air fryer according to manufacturer’s instructions.

 

8. Place four taquitos in air fryer basket. Air fry at 400°F for 4 minutes or until golden brown and cheese is melted. Repeat with remaining taquitos.

 

9. Serve taquitos with sour cream, guacamole and pico de gallo for dipping.

 

Cooking Tips Substitute flour tortillas for corn tortillas if preferred. For additional smoky flavor, add cooked crumbled bacon to taquitos. Substitute Oaxaca cheese for Monterey Jack cheese if desired.
